Sacred Cacao: Bitter + Sour
The husk used in Rasa Teas comes from organic small-holder farms in Chililique, Peru and Maya Mountain, Belize via Ali Gower, director of Chocolate Tree in Scotland.
Sadly, most modern cacao farming has a detrimental effect on the land where it is mono-cropped. The trees that Rasa Teas are born from are grown as a companion to other plants and wildlife. Cacao trees are in fact well suited to growing in the shade and therefore make for an easy addition to a thriving ecosystem, composing of giant and tiny flora alike. Heirloom variety trees are those that have not been genetically modified, instead, they encapsulate a much richer historic, nutritional and flavoursome profile.
Cacao provides the bitter taste which is cleansing for the body and since the beans are fermented, we can benefit from the sour taste which is stimulating for the whole digestive system as well as the mind.
Ceylon Cinnamon: Sweet + Pungent
Ceylon is the highest quality of cinnamon and the quills in Rasa Teas are sourced from small-scale farmers in Sri Lanka. As one of the world’s oldest spices, even being used by the Pharoahs, cinnamon comes from tropical, evergreen trees related to bay plants. Organic cinnamon quills have a complex and fragrant citrus flavour that is full of exotic sweetness.
Sweet is the most comforting of all 6 tastes in Ayurveda. It is soothing to the mind and can be used to heighten awareness in spiritual realms. It is pungent and warming, helping to strengthen and harmonise the flow of circulation.
Green Cardamom Pod: Pungent + Astringent
This distinctive, aromatic spice add a beautiful flavour to the Chocolate Chai mix. Cardamom is a perennial plant that grows in the shade, often beneath larger shade trees like areca nut, disliking windy weather. The bright green and plump pods are hand-picked from the base and are largely flavourless in the fresh form. They are then dried over a 3-4 day period while the aroma blossoms.
The astringent taste in cardamom works by absorbing excess moisture in the system which in turn, has a refreshing effect on the tongue. The pungent properties further cleanse the mouth and warm the whole body.
Fennel Seed: Sweet + Pungent
Fennel has been used therapeutically for centuries. This is a tri-doshic herb that has a wide variety of medicinal properties. These seeds are most commonly revered for their digestive support, helping to stimulate digestion and also ease constipation, flatulence and bloating.
Fennel is sweet and adds a touch of aniseed. Although this herb is pungent, it does not aggravate pitta due to its cooling properties.
